Chicken Tortilla Soup
- 2 cans of corn or 1 bag frozen
- 10 oz red enchilada sauce
- 28 oz canned diced tomatoes
- 7 oz diced green chili’s
- 1 carton chicken broth
- 2 cooked and shredded chicken breast
- 1 tsp garlic powder or 2 garlic cloves
- 1 tbs ground cumin
- 1 tbs chili powder
- Salt and pepper to taste
Mix above ingredients in crockpot on low for 4-6 hours. You can add more seasoning to your liking. Serve with sour cream, cheese, crackers, tortilla chips, cilantro, or anything else you like.
