Hey y’all! Ken and I were starting to prepare dinner tonight and I realized I have never shared our Chicken Carbonara recipe with you. This is another family favorite that I have been making for years. Our twins request it ALL THE TIME. lol It’s fairly easy to make but does take some time so be sure to try this recipe on a night when you have more time to prepare dinner.
Chicken Carbonara Recipe
Ingredients
1lb Bacon
3 Boneless Skinless Chicken Breasts
1lb Angel Hair Pasta
Cottage Cheese
Mozzarella Cheese
Italian Seasoning
Garlic Powder
Parmesan Cheese (optional)
Instructions
Begin by frying 1 pound of bacon in a large pan. I like to use a pan with sides as it will come in handy later. Don’t throw out the bacon grease. You’ll need that later.
2. Next, cut the chicken breast in to small strips and fry in the bacon grease. I like to add some Italian seasoning and garlic powder in this step to add a little extra flavor to the chicken.
3. While the chicken is cooking, bring a pot of water to a boil and add 1 lb. of angel hair pasta.
4. Once the chicken has completed cooking, remove only the chicken from the pan leaving nothing but the grease. Add the cottage cheese and allow it to melt. Sprinkle with Italian seasoning and garlic powder, amount depends on how strong of a garlic flavor you like. We love garlic so I add quite a bit!
5. Once the pasta has cooked through, drain the noodles then add them to the pan with the melted cottage cheese and stir them together.
6. Now add the bacon, chicken, and mozzarella to the pasta and mix.
7. It is now ready to serve. You can also add some Parmesan cheese to the top. Our family usually adds it to their own bowl.
